Gregg's Freezer Pickles

  1. 4 C unpeeled cucumber sliced super thin (not waxed). I have used Kirbys or English with good results.
  2. Water to cover
  3. 2 T kosher salt
  4. 1-1/2 C sugar
  5. 1/2 C white vinegar

Put cucumber slices in glass bowl or crock (no metal or plastic). Cover with water and add salt. Soak at room temperature 2 hours. Drain, but do not rinse. Dissolve sugar in vinegar in a nonreactive dish, pour over cukes and mix gently. Divide into freezer containers and cover with brine evenly. Cover tightly and freeze. Thaw overnight in fridge or 2 hours at room temperature. Makes about 1 qt. of crisp, sweet pickles.

Don't ask me who Gregg is or where this recipe came from. All I know is they are great. Just ask Allen!

Coconut Cream Dressing

  1. 1 C cream of coconut milk (Coco Lopez)
  2. 1/4 C cider vinegar
  3. 1 (.6-oz) pkg dry Italian salad dressing mix (Good Seasons)

Whisk all ingredients together well. Chill thoroughly. I use this on coleslaw, but I'm sure you will find other favorite uses.

Ho-Hum

This could be boring unless I get some conversations going. Maybe I don't understand how this blogging thing works. If anyone can give me some insight, I might have a better idea of what to expect and whether or not this is a feasible project.

Daytona, my birthday and Easter have come and gone. Plans for family reunion in Wisconsin are firming up (at least for the Florida people). At last count, only Suz and I can make it. I would really love it if someone published just one new recipe.

How about some feedback?

Come on people. Help me out here please. I am trying to formulate something worthwhile for our family reunion. Treasured family recipes, new finds you think we would love (no secrets--the Scott family shares recipes), even funny or interesting failures, but most of all, the memories associated with special events involving food. Acknowledge source and date, if possible. Thanks for your help--it will be something we can leave for posterity.`

I am really disappointed no one has chimed in. If this is too boring, well poor me--I will just go eat worms and die. I know that is rather melodramatic, but I feel that way today. I am sorting through my vast collection of cookbooks and came across one published in 1972. I had marked a recipe for curried chicken salad and remembered it being really good. So here goes--

  1. 3-1/2 to 4-pound whole chicken, poached
  2. 1 sweet apple, chopped
  3. Small jar sweet watermelon rind, chopped
  4. 5-oz can of water chestnuts, chopped
  5. Green onions, sliced thinly, including green parts
  6. 3-1/2 oz can shredded coconut
  7. Chicken broth
  8. Lettuce or romaine, shredded
  9. Small box candied ginger, chopped
  10. Chutney, celery, parsley, salt, curry powder, mayonnaise

Poach chicken in advance, cool, remove skin, bones and chop coarsely. Combine with ingredients 2-6. In a small saucepan combine 1 Tablespoon curry powder and 2 Tablespoons chicken broth over low heat until mixture becomes a smooth paste. Combine this with 1 Cup of Mayonnaise. Add this to chicken mixture. Add chopped candied ginger, chutney, celery, parsley and salt to taste.

Exact amounts of ingredients are not critical. You may need more mayo. Pile salad on romaine lined chilled plate and top with more chopped candied ginger and coconut.

The secret of this is to cook the curry powder before mixing into mayo, otherwise it will be bitter.

This sounds exotic, but really good and worth the effort. Enjoy!

Hi world (or whomever is looking at the inagural posting of a complete newby at blogging). My idea or purpose of this adventure is to create a centralized location for family, friends and interested parties to compile recipes that we know and love, especially from those who are no longer with us, recipes from family reunions, special events, memorable or (gasp) otherwise. My goal is to provide copies of recipes I possess, those that you can contribute, and soon-to-be famous favorites. I would appreciate all the help I can garner in this endeavor, as blogging is completely new to me. Thanks in advance for your help.
