Gregg's Freezer Pickles

  1. 4 C unpeeled cucumber sliced super thin (not waxed). I have used Kirbys or English with good results.
  2. Water to cover
  3. 2 T kosher salt
  4. 1-1/2 C sugar
  5. 1/2 C white vinegar

Put cucumber slices in glass bowl or crock (no metal or plastic). Cover with water and add salt. Soak at room temperature 2 hours. Drain, but do not rinse. Dissolve sugar in vinegar in a nonreactive dish, pour over cukes and mix gently. Divide into freezer containers and cover with brine evenly. Cover tightly and freeze. Thaw overnight in fridge or 2 hours at room temperature. Makes about 1 qt. of crisp, sweet pickles.

Don't ask me who Gregg is or where this recipe came from. All I know is they are great. Just ask Allen!
